How to Cook It Properly
Preparation

- Season generously
Cooking Method
- High heat sear
- 4 minutes per side (1½–2 inches thick)
- Finish in 375–400°F oven if needed
Target internal temperature: 125–130°F
Resting
- Rest 10 minutes before slicing
