Pork Chops

Serve with couscous, salsa and green beans.

Ingredients

  • 4 bone-in pork chops (6 oz. each)
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 tbsp fresh thyme
  • 1 tbsp. rosemary
  • 1 tbsp paprika
  • 1 lemon
  • Salt
  • black pepper

Cooking Instructions 

  1. Preheat grill to medium high.
  2. Combine olive oil, garlic, thyme, rosemary, paprika, squeeze of lemon juice and some chopped lemon peel together.
  3. Season pork chops with salt and black pepper.
  4. Rub olive oil mix on pork chops and keep in fridge for minimum of 30 minutes.
  5. After the 30 minutes, sear the pork chops on the grill, about 2 minutes per side. 
  6. Then reduce grill heat to medium. Grill pork chops an additional 4-5 minutes per side to an internal temperature of 145 degrees. 
  7. Use an instant read meat thermometer to measure the internal temperature of the thickest portion of the pork chop without touching the bone. 
  8. Don’t burn chop. 
  9. Let pork chop rest on a clean plate for 5 minutes (cover the plate with foil). 
  10. The pork chop will continue to heat.
  11. Serve with couscous and salsa.
