Serve with couscous, salsa and green beans.
Ingredients
- 4 bone-in pork chops (6 oz. each)
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 1 tbsp fresh thyme
- 1 tbsp. rosemary
- 1 tbsp paprika
- 1 lemon
- Salt
- black pepper
Cooking Instructions
- Preheat grill to medium high.
- Combine olive oil, garlic, thyme, rosemary, paprika, squeeze of lemon juice and some chopped lemon peel together.
- Season pork chops with salt and black pepper.
- Rub olive oil mix on pork chops and keep in fridge for minimum of 30 minutes.
- After the 30 minutes, sear the pork chops on the grill, about 2 minutes per side.
- Then reduce grill heat to medium. Grill pork chops an additional 4-5 minutes per side to an internal temperature of 145 degrees.
- Use an instant read meat thermometer to measure the internal temperature of the thickest portion of the pork chop without touching the bone.
- Don’t burn chop.
- Let pork chop rest on a clean plate for 5 minutes (cover the plate with foil).
- The pork chop will continue to heat.
- Serve with couscous and salsa.
