Denver Steaks with Herb Butter & Wild Rice

Ingredients
- 4 Teodora’s Prime Denver Steaks
- 1 tablespoon kosher salt
- 1 lb unsalted butter (2 sticks)
- 1 teaspoon black pepper
- 1 bunch rosemary
- 1 bunch thyme
- 1 cup wild rice
Steps
1. Remove steaks from the refrigerator 30–60 minutes before grilling to temper (bringing meats up to room temperature maintains tenderness and creates a better sear) and pat dry.
2. Season both sides of steaks with kosher salt and set aside.
3. Remove rosemary and thyme leaves from their stems and finely chop, set aside. (For more intense herb flavor, save the stems and tie together with thyme to add into the butter, remove before serving.)
4. Melt butter in a small saucepan over low heat. Once completely melted, add your prepped herbs, fresh ground black pepper, and a healthy pinch of salt. Keep on medium-low heat; small bubbles are okay, but avoid a full boil/large bubbles. Remove from heat and swirl if the butter gets too hot.
5. Start cooking the wild rice using the directions on the package.
6. While rice is cooking, turn your grill on and preheat to around 450°F. High heat will give you the best sear; if possible, set up a two-zone grill (one side high heat, one side moderate heat) so you can move steaks as needed.
7. Place steaks over direct heat and sear about 2–3 minutes per side until a brown crust forms. Move to the cooler zone or reduce heat and continue grilling, flipping every minute or so, until they reach your preferred internal temperature (about 125°F rare, 130–135°F medium-rare, or 140–145°F medium). This usually takes 10–15 minutes total depending on steak thickness. Pull the steaks off about 5°F shy of your target since they’ll finish cooking while resting.
8. Transfer steaks to a platter or cutting board, rest 5–10 minutes. Slice against the grain into strips.
9. Pour half of your herb butter into the wild rice and stir to combine.
10. Spoon wild rice onto each plate, top with sliced steak, and drizzle the remaining herb butter over the steaks before serving. Enjoy!
